L: Baking Success! Cute Kitties and a Trip to Kent State

Here is the latest baking of Italian Bread, a braided white bread that’s good for sandwiches and french toast.  Great recipe!

This bread doesn’t require a lot of work- just flour, salt, yeast, water, and olive oil all kneaded together until smooth.  The only thing is it takes a long time to make because of the double rising time.  You let the kneaded smooth dough sit for 1.5-2 hours and then you split the dough into 3 parts to braid it.  After braiding, you brush egg white onto the surface and then you let the braided loaf sit for another 1-1.5 hours. Just before baking, brush another layer of egg white and sprinkle white or black sesame seeds evenly over the top of the loaf.  Then you bake it for 20-25 minutes at 400 F degrees and it’s done, a beautiful golden brown!  It’s a great tasting bread with the perfect texture. It’s not very porous, but very very moist and dense.  It soaks up liquid well, so it’s good for french toast and bread pudding too.
